Rice soup - Betje Netten

Preparation time:
45 minutes

Ingredients (for 4 people):

  • 600 g leeks
  • 120 g rice
  • 3 large potatoes, chopped
  • 2 smoked sausages
  • 250 g minced meat
  • 5 stock cubes (beef)
  • 2.5 litres of water
  • Butter, for frying


1. Rinse the leek and slice into fine rings. Fry the leeks and potato in a little butter. Add 2.5 litres hot water and the stock cubes. Simmer for 10 minutes.

2. Add the rice. Cut the smoked sausage in half lengthwise and then in slices. Add to the pan and simmer for another 10 minutes.

3. Shape small balls from the minced meat and add to the soup. Season with pepper (salt will not be necessary). When the little meatballs float to the surface, the soup is ready. Let it rest for another 10 minutes before serving.
