Pork stew with white cabbage - Gjergj Nuku

25 minutes + 1.5 hours simmering

INGREDIENTS: for 4 people

  •  1 kg pork (e.g. pork fillet)
  • 1 whole white cabbage
  • 1 onion
  • 1 carrot
  • 1 celery stalk
  • 3 tbsp tomato paste
  • pinch of salt and pepper
  • 1 tbsp olive oil
  • 2 bay leaves
  • ½ glass white wine

Chop the onion, carrot and celery. Heat a large stew pot with the olive oil and add the chopped vegetables. Stir-fry for 3 min. Add the pork and season with salt and pepper. Fry the meat for 6 min on medium heat, then pour in the white wine. After 1 min, add the tomato paste and the bay leaves. Fry for another 3 min, then put the lid on the pan, turn down the heat and simmer. Next, slice the white cabbage into fine strips and add to the pork, stirring well. Add 2 glasses of water. Put the lid back on the pan and let the stew simmer for 1½ hours on medium-low heat. Season to taste with salt and pepper. Serve the stew with white rice, mashed potatoes or freshly baked bread. Baft mir! Enjoy your meal!
